Stuffed Tomatoes – Family Dinner


  • 3 tablespoons olive oil
  • coarse salt
  • 6 medium to large tomatoes
  • chilli flakes
  • ½ small onion, finely chopped
  • 1 garlic clove, minced
  • 9 tbsp short grain rice
  • few tablespoons chopped parsley, oregano or basil
  • handful of breadcrumbs


  1. Heat oven to 175ºC.
  2. Lightly coat ovenproof baking dish with olive oil.
  3. Remove and discard top of tomatoes; leaving whole but with seeds removed.
  4. Mix together dry ingredients, onion and garlic and stuff cavity of tomatoes.
    Top with mixture of breadcrumbs and herbs.
  5. Bake uncovered for 30 mins until tomato walls are soft and the rice inside has finished cooking.
  6. Serve hot.
  7. Repeat again for tomorrow.
