Birthdays are an exciting time, the birthday wishes, the birthday presents and of course the birthday cake. I’m not exactly a traditionalist when it comes to the birthday cake; I much prefer single serve cup cakes.
Recently I was left in charge of making the “Birthday Cup Cakes”. After the evening routine, dinner, put Darcy to bed, shower, I turned the oven on (to preheat) and I laid out my ingredients:
And… Milk… Where’s the milk? I opened the fridge to grab the milk carton but discovered I had run out. I looked at my watch, 10.30pm, I could run to the local supermarket, they would still be open, but that would put my bedtime around midnight.
What could I use for a milk substitute?
Being Gen Y, I quickly typed into Google “Milk substitutes for baking” the first website told me to use 1/2 cup evaporated milk plus 1/2 cup water. “Ha! I don’t have milk in the house, why would I have evaporated milk?” I said to myself. The second website gave me no joy either.
I ran to the cupboard frantically searching for the answer, there must be some trick my mother taught me. After a moment I sighed, resigned to the fact that I would have to make that run to the supermarket.
Suddenly out of the corner of my eye I saw a green and blue can, I eagerly grabbed the can and scanned over the information
“The protein source of Bellamy’s Organic Toddler Milk Drink is derived from cow’s milk!” “Whooo! My milk solution!” I cried out in joy.
I mixed up a cup and was on my way. A little while later, after my “Toddler Drink” cupcakes were cooked and cooled, I cautiously bit into the smallest one wondering what it would taste like. I couldn’t believe it, these were the best cup cakes I have ever made, creamy and smooth, now that I have Toddler Drink I’ll never need “regular milk” again.
